I defrosted a chicken breast for lunch today and was then asked to feed four instead of two of us.
I have a sausage that I skinned and moulded into balls, I've made a batch of stuffing and have Yorkshire pudding batter sitting in the fridge.
By the time I've done mashed and roast potatoes, cabbage, sprouts, carrots and peas I'm sure no one will notice how meager the chicken is.
I will make a traybake to fill up any corners.

Take care! X
Sounds good. Doesn’t matter what you have at times like this as long as you feel full.
extra veg is always good, especially with onion gravy ;)

Sounds good to me.
Mmm... love Yorkshire pudding! I wouldn't miss the meat with all these veggies and stuffing too.
An excellent way of stretching out the meat. It sounds lovely and plenty to fill up on.
