In this week's box:-
Asparagus, tomatoes, courgette, potatoes, mushrooms, orange peppers, pears, oranges and strawberries.
So lots of stuff to feed me this week. I also bought some nectarines when I was out with Betty.
When Steve does the shopping I can ask him to buy fruit and veg for me but he really doesn't understand the need for fresh stuff. He is more likely to buy tinned or frozen.
I have bought a jar of anchovies so when I have peppers in my veg box I cut them in half, put two crossed anchovy fillets in each half along with a couple of halved cherry tomatoes. Sprinkle with some of the oil from the anchovy jar and cook until the pepper is soft.
Delicious, this was one of my fathers favourite meals, served with crusty bread.

I love red peppers cooked that way and with a few thin slices of fresh garlic added. It makes the oil even more delicious to mop up with crusty bread. It sounds as though the veg box was just right for you Enjoy!!
oh, that does sound good! I always forget that anchovies add so much flavour. I must start using them more often.
